A second selection of the raw material is carried out on the sorting table. This rosé is obtained by draining our static tanks red. The wine is for 8 months, mostly in the tank and about 20% in barrels.
The Palette AOC is the smallest appellation in Provence and one of the oldest. Born in 1948, she has only 42 hectares divided among a few producers.
This appellation is rich in diversity of old vines of Provence respected and preserved. A micro label the gates of Aix-enProvence whose peculiarity is made by a sol derived from the training called "Limestone of Angesse" from the rocky barrier of the Sainte Victoire.
The color is cherry, with hints of raspberry and deep.
The bouquet is delicate, fresh, marked by aromas of fresh fruit (raspberry).
Mouth wide, this volume, finesse, bold without aggression. The final, delicate, is characterized by silky tannins still young but with a pleasant spicy persistence, griottées.
