In 1996, Henri Bonnaud finally agrees to take more. But Stéphane has other ambitions, they make their own wine and build a "castle."
In 2004, he vinified his first vintage. And in memory of his grandfather, who died in 2001, he decided to baptize Chateau Henri Bonnaud.
Stéphane Spitzglous is a passionate, self-taught. In 2010, he opted for organic farming and an organic wine in 2012, and by conviction. He works in respect of our environment. It uses no chemical fertilizers or herbicides.
Replacement of missing plants is done on a regular basis to keep the plots where there are old vines more than 60 years.
Henri Bonnaud castle is located in the town of Tholonet, 6km south-east of Aix-en-Provence. This is also where you find the majority of plots classified as AOC Palette. Our plots extend over 14 hectares of this beautiful name that has only 42. The name Palette is one of the most confidential of France, and there are fine wines.
His region comprises a ground limestone scree called "Langesse". (lacustrine limestone of the Tertiary). Domain nestled in a natural amphitheater, protected from the mistral by hills and Langesse Grand Cabri, and the mountains of Cengle and Sainte-Victoire benefits from a microclimate.
