Our parcel of old vines for this wine is harvested
slightly on maturity. The grapes are destemmed and put in juicer.
A slight maceration is done a few hours before pressing.
Grape juice obtained is decanted to a temperature of 8 ° C before being transferred
in new oak barrels and used or up to 4 years.
The alcoholic and malolactic fermentations are carried out entirely
in Bordeaux barrel.
The wines produced are high for 10 to 12 months before being assembled in vats of chardonnay in a proportion of about 30% of tank / was 70%.
